Broccoli Pesto Dip
Who knew Broccoli could taste this wonderful? Try this simple and healthy alternative to traditional dips, filled with fiber and Vitamin K. And the part we love the most? You can feel good about eating it, as it’s broccoli after all!
Ingredients
- 2 cups broccoli
- 1 garlic clove
- 1/3 cup almonds (slivered)
- 1/3 cup Parmesan cheese
- 2 tablespoons lemon juice
- 1/4 cup olive oil
- 1/2 cup ricotta
Instructions
- Put the broccoli in the steamer basket.
- Pour water into the tank (level 1).
- Start the cooking process.
- When the broccoli is cooked, put it in the blending bowl and discard the cooking liquid.
- Add the olive oil and garlic, followed by the rest of the ingredients.
- Blend, adding additional oil if needed.
