White Cheddar & Cauliflower Mac n Cheese

A dish loved by ALL kids, but with the addition of a few veggies! Mac n’ cheese is a great way to hide some veggies into your toddler’s meal. This recipe features cruciferous vegetables broccoli and cauliflower. Cruciferous vegetables have a plethora of health benefits.

White Cheddar & Cauliflower Mac n Cheese

Instructions

  1. First, steam cook pasta with the Rice/Pasta insert on water level 3.
  2. Then, steam broccoli and cauliflower on water level 2.
  3. Immediately place the cauliflower, cheddar, butter and milk into the blending bowl and pulse puree until evenly mixed.
  4. Place onion, salt and pepper into the blending bowl as well, blending time depends whether you want smooth or chunky.
  5. Then, place mixture into a bowl. Combine the mixture, pasta, and broccoli until evenly mixed.
  6. Top with parmesan if desired. Serve and enjoy!
  7. If cheese does't melt thoroughly, simply heat the sauce on a skillet or microwave for leftovers.
