Sweet Potato/Yacón and Carrot Purée
For this recipe, we chose to mix sweet potato or yacón with carrot. This maintains the vibrancy of the dish, and preserves all of the good nutritional properties, but reduces the quantity of sugar ingested by the baby.

For this recipe, we chose to mix sweet potato or yacón with carrot. This maintains the vibrancy of the dish, and preserves all of the good nutritional properties, but reduces the quantity of sugar ingested by the baby.
Ingredients
- 1/2 cup sweet potato or yacón cubed
- 1/2 cup carrots sliced
Instructions
- Put the sweet potato or yacón and carrots in the steamer basket.
- Pour water into the tank (level 3).
- Start the cooking process.
- When the sweet potato or yacón and carrots are cooked, put them in the blending bowl, reserving the cooking liquid.
- Add some of the cooking liquid to bring the purée to the desired consistency and blend.
