No-Bake Cheesecake

No-Bake Cheesecake

Crust
  1. Put graham crackers in the blending bowl.
  2. Pulse-blend until graham crackers become a powder consistency.
  3. Add melted butter; pulse-blend to combine.
  4. Spread graham cracker-butter crust in spring-form pan (or in Multiportions) and pack it down so that it forms a dense crust.
Filling
  1. Add chilled heavy whipping cream to the blending bowl.
  2. Pulse-blend for 15-30 seconds, or until thicker consistency forms.
  3. Add coconut sugar. Pulse-blend to combine.
  4. Add cream cheese. Pulse-blend to combine.
  5. Pour filling onto crust.
  6. Refrigerate until filling firms a bit; approximately 1-2 hours.
  7. Garnish with berries if desired.
