Minty Zucchini Soup
This soup/purée is simple, yet has a lot of flavor and protein thanks to the mint and peas.
Ingredients
- 2 cups zucchini sliced
- 1 1/2 cups peas frozen or fresh
- 1 1/2 tablespoons mint leaves chopped
Instructions
- Put the zucchini and peas into the steamer basket.
- Pour water into the tank (level 2).
- Start the cooking process.
- When the zucchini and peas are cooked, put them in the blending bowl, reserving the cooking liquid.
- Add the mint leaves and some of the cooking liquid to bring the purée to the desired consistency and blend.
