This zucchini soup is minty-fresh and extra satisfying, thanks to feta cheese!
Ingredients
- 1 cup zucchini sliced
- 1 1/2 cups potatoes cubed
- feta cheese crumbles to taste
- 1 teaspoon mint chopped
Instructions
- Put the vegetables into the steamer basket.
- Pour water into the tank (level 2).
- Start the cooking process.
- When the vegetables are cooked, put them in the blending bowl with the feta, reserving the cooking liquid.
- Add some of the cooking liquid to bring the purée to the desired consistency and blend.
