Irish Soda Bread Muffins
You don't have to be Irish to enjoy these Irish Soda Bread Muffins! They're simple to make and just sweet enough. Bake them in Multiportions and they'll be the perfect portion size - but we can't guarantee that you'll only have one!
Ingredients
- 2 cups flour
- 6 tablespoons sugar, divided
- 1 1/2 teaspoons baking powder
- 1 teaspoon salt
- 3/4 teaspoon baking soda
- 3 tablespoons butter, cut into 1/4 inch cubes
- 1 cup buttermilk
- 2/3 cup raisins
Instructions
- Preheat oven to 375 degrees.
- Put the flour, 3 tablespoons sugar, baking powder, salt and baking soda in the blending bowl.
- Pulse-blend to combine, then pour into a large bowl.
- Add butter and mix with hands until small pebbles form.
- Form a well in the middle of the flour mixture and pour buttermilk into it.
- Add the remaining dry ingredients and stir, then add raisins.
- Add the mixture to the Multiportions until each portion is about 2/3 of the way full. Sprinkle remaining sugar on top.
- Bake 15 to 18 minutes, or until the tops are crispy brown and a toothpick inserted in the middle of a muffin comes out clean.
