Hidden Veggie Marinara
Need a quick fix to get your toddler eating some veggies? No worries, it's all in the SAUCE. This hidden veggie marinara is perfect for noodles, zoodles, chicken parmesan and everything in between!
Ingredients
- 1/2 zucchini diced
- 1/2 cup eggplant diced
- 1/2 cup carrot diced
- 1/2 yellow onion diced
- 2 can crushed tomatoes
- 1 tbsp tomato paste
- 2 cloves fresh garlic
- 1 pinch salt
- 1 pinch black pepper
Instructions
- First, steam zucchini, eggplant and carrot on water level 2.
- Next, transfer contents from steam basket to blending bowl.
- Add yellow onion, crushed tomatoes, tomato paste, garlic, salt and pepper to the blending bowl.
- Pulse blend until desired consistency is reached,
- Enjoy over whatever dish your heart desires!
