Hidden Carrot & Pumpkin Mac n’ Cheese
we used whole wheat shelled pasta
steamed and pureed
salt and pepper
First steam your noodles using the rice pasta grain insert on water level 3. Once done, place into a serving bowl on the side.
Next, steam pumpkin and carrots on water level 3.
Next, transfer the pumpkin and carrots into the blending bowl.
Blend until thoroughly mixed, adding in the garlic, nutritional yeast, coconut milk, olive oil, and vegetable broth as you go. At the end, begin to add in salt and pepper to taste.
Once all mixed, transfer the sauce to your noodle bowl. Mix with a spoon or fork. Top with breadcrumbs if desired.
