Hidden Carrot & Pumpkin Mac n' Cheese
A healthy, vegan twist on a toddler classic. Fall has arrived and so have the fall recipes your toddler is sure to love!
Ingredients
- 1 cup Pasta we used whole wheat shelled pasta
- 1/2 cup pumpkin pureee
- 1/2 cup carrots steamed and pureed
- 1 garlic clove
- 1/4 cup nutritional yeast
- 1 tbspn coconut milk
- 1 tspn olive oil
- 2 tbsp veegetable broth
- salt and pepper to taste
Instructions
- First steam your noodles using the rice pasta grain insert on water level 3. Once done, place into a serving bowl on the side.
- Next, steam pumpkin and carrots on water level 3.
- Next, transfer the pumpkin and carrots into the blending bowl.
- Blend until thoroughly mixed, adding in the garlic, nutritional yeast, coconut milk, olive oil, and vegetable broth as you go. At the end, begin to add in salt and pepper to taste.
- Once all mixed, transfer the sauce to your noodle bowl. Mix with a spoon or fork. Top with breadcrumbs if desired.
