Cilantro Lime Rice

What’s the easiest way to make plain rice a bit more exciting? Cilantro! This is a yummy (and oh-so-easy) side dish for baby and for the rest of the family – the amount of cilantro, garlic and lime can easily be adjusted to cater to everyone’s palates.

  1. Put rice and garlic clove in the Rice, Pasta and Grain Insert.
  2. Pour water into the tank (level 3) and 1/2 cup + 2 tablespoons of water directly into the insert.
  3. Start the cooking process.
  4. When the rice is cooked, put it aside. Place cooking liquid in a separate bowl.
  5. Put the cilantro, lime juice, olive oil and sea salt in the blending bowl.
  6. Pulse blend to combine.
  7. Add rice and stir with spatula if serving to an older baby/the family OR pulse to blend, adding some of the cooking liquid if needed, until the desired consistency is reached.
Recipe Notes

As always, please check with your pediatrician before introducing new foods to your baby. “For most babies, it does not matter what the first solid foods are. By tradition, single-grain cereals are usually introduced first. However, there is no medical evidence that introducing solid foods in any particular order has an advantage for your baby. Although many pediatricians will recommend starting vegetables before fruits, there is no evidence that your baby will develop a dislike for vegetables if fruit is given first. ” –American Academy of Pediatrics
