Caribbean Coconut Macarons
These 5 ingredient macaroons are a sweet & easy treat that the whole family will love. You can finish this recipe off by sprinkling with crushed nuts or dipping/drizzling in chocolate. Yum!
Ingredients
- 3 cups unsweetened coconut (sweetened coconut can be used, too)
- 4 large egg whites
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground sea salt
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- Put the egg whites, sugar, vanilla extract and salt in blending bowl.
- Cover blending bowl with both lids (mixing lid and the lid attached to the arm of the Babycook) to prevent any extra food from coming out of the pour spout.
- Pulse to blend only until mixture becomes frothy.
- Add coconut in; pulse-blend, scraping the sides as needed, until combined.
- Line a cookie sheet with parchment paper.
- Shape coconut mixture into 1 - 1 1/2 inch balls.
- Place them about 1 inch away from each other on the cookie sheet.
- Bake for 15-20 minutes, or until golden brown.
