Beet, Goat Cheese & Parsley Purée

Baby got beets! This super simple Stage 2 purée is filled with Vitamins A through C and takes only 10 minutes to make. 

 

Ingredients
Instructions
  1. Put the beets & cilantro into the steam basket
  2. Pour water into the tank (level 2) and start the cooking process
  3. When the beets are cooked, put them in the blending bowl with the goat cheese, reserving the cooking liquid.
  4. Pulse to blend, adding the cooking liquid to bring the purée to the desired consistency.
  5. Top with goat cheese and/or cilantro as desired

Note: the red juice of beets easily stains!
