Beet, Goat Cheese & Parsley Purée
Baby got beets! This super simple Stage 2 purée is filled with Vitamins A through C and takes only 10 minutes to make.
Ingredients
- 1 cup beets skin removed and cubed
- 2 tablespoons goat cheese
- 2 tablespoon cilantro to taste
Instructions
- Put the beets & cilantro into the steam basket
- Pour water into the tank (level 2) and start the cooking process
- When the beets are cooked, put them in the blending bowl with the goat cheese, reserving the cooking liquid.
- Pulse to blend, adding the cooking liquid to bring the purée to the desired consistency.
- Top with goat cheese and/or cilantro as desired
Recipe Notes
Note: the red juice of beets easily stains!
