Avocado Cucumber Soup

What’s the best way to cool off on a hot day in the spring or summer? Your first guess may not be soup, but we assure you that this velvety-smooth Avocado Cucumber soup will cool you and baby off and leave you feeling refreshed. Trust us on this one! The best part is that it can easily be adjusted and made a bit spicier for adults, or more mild for babies and toddlers. 

  1. Put the avocado, cucumber and lime juice in the blending bowl.
  2. Pulse to blend, using the Babycook’s spatula to scrape down sides as needed.
  3. Add all the ingredients, except the water, pulsing to combine and scraping the sides as necessary.
  4. Add water in 1/2 cup increments until the desired consistency is reached.
