Plum Tomato Sauce
Tomatoes are heart-healthy and offer an abundance of vitamins A, C and K. This recipe comes from our new cookbook, so we're excited to share it! Serve this sauce over pasta, with chicken fingers or with mini meatballs.
Ingredients
- 1 cup plum tomatoes seeded and chopped
- 2-3 basil leaves
- 1 teaspoon olive oil
- 1 tablespoon tomato paste
- pinch garlic powder or 1/2 clove of garlic (optional)
- pinch salt (optional)
- 1 tablespoon Parmesan cheese grated (optional)
Instructions
- Put the tomatoes in the steamer basket.
- Pour water into the tank (level 3).
- Start the cooking process.
- When the tomatoes are cooked, put them, and the basil, olive oil, and tomato paste in the blending bowl, and blend to the desired consistency.
- If desired, add the garlic, salt, and Parmesan cheese (for children at least 12 months old) and blend again. You may also simmer the sauce on the stove top for 10 minutes longer to further cook the tomatoes.
