New England-Style Meatloaf Muffins with Apple Glaze
This alternative to traditional meatloaf uses chicken for lean protein and cranberries for an anti-oxidant boost. It's the perfect recipe for toddlers, but can also be a great appetizer for adults!
Ingredients
- New England-Style Meatloaf Muffins
- 1/2 cup apple diced
- 1/4 cup celery diced
- 1/4 cup onion diced
- 1 teaspoon fresh thyme
- 6 ounces chicken breast cubed
- 1 egg white
- 1 teaspoon olive oil
- 1/4 cup breadcrumbs
- 1/4 cup dried cranberries
- Apple Glaze
- 1/3 cup apple cubed
- 1 tablespoon maple syrup
Instructions
New England-Style Meatloaf Muffins
- Preheat oven to 375 degrees.
- Put the apple, celery, onion, and thyme in the steamer basket.
- Pour water into the tank (level 1).
- Start the cooking process.
- Once the vegetables are cooked, set them aside in a small bowl to cool. Discard cooking liquid.
- Add cooked and cooled vegetables, egg white, olive oil, raw chicken, and breadcrumbs into blending bowl and blend. Don’t overwork.
- Remove the mixture to a large bowl and fold in cranberries.
- Scoop meatloaf mix into the Beaba Multiportions Silicone tray. Top each muffin with 1 teaspoon of Apple Glaze (instructions follow).
- Bake in oven for 25 to 30 minutes until internal temperature of meatloaf muffin reaches 165 degrees.
Apple Glaze
- Put the apple in the steamer basket.
- Pour water into the tank (level 2).
- Start the cooking process.
- When the apple is cooked, put it in the blending bowl. Discard cooking liquid.
- Add maple syrup and blend to desired consistency.
