New England-Style Meatloaf Muffins with Apple Glaze

This alternative to traditional meatloaf uses chicken for lean protein and cranberries for an anti-oxidant boost. It's the perfect recipe for toddlers, but can also be a great appetizer for adults!

New England-Style Meatloaf Muffins
  1. Preheat oven to 375 degrees.
  2. Put the apple, celery, onion, and thyme in the steamer basket.
  3. Pour water into the tank (level 1).
  4. Start the cooking process.
  5. Once the vegetables are cooked, set them aside in a small bowl to cool. Discard cooking liquid.
  6. Add cooked and cooled vegetables, egg white, olive oil, raw chicken, and breadcrumbs into blending bowl and blend. Don’t overwork.
  7. Remove the mixture to a large bowl and fold in cranberries.
  8. Scoop meatloaf mix into the Beaba Multiportions Silicone tray. Top each muffin with 1 teaspoon of Apple Glaze (instructions follow).
  9. Bake in oven for 25 to 30 minutes until internal temperature of meatloaf muffin reaches 165 degrees.
Apple Glaze
  1. Put the apple in the steamer basket.
  2. Pour water into the tank (level 2).
  3. Start the cooking process.
  4. When the apple is cooked, put it in the blending bowl. Discard cooking liquid.
  5. Add maple syrup and blend to desired consistency.
