  1. Put the pecans and walnuts in the blending bowl. Pulse to blend until it reaches a fine cornmeal-like consistency. Put the ground nuts in a bowl and set aside.
  2. Put the dates in the blending bowl and pulse-blend until the dates are fully blended and/or come together to form a ball.
  3. Add the cocoa powder and half of the ground nuts and pulse to blend. Continue to pulse-blend while adding more of the ground nut mixture only until the mixture forms a single mass. Note that not all the nut mixture has to be added to the mixture – any extra nuts can be used to coat the truffles at the end.
  4. Form 1-tablespoon balls from the nut-date mixture and place on a wax paper covered plate. Set these in the freezer to chill.
  5. While the truffles are chilling, put the dark chocolate in a bowl and microwave in 15-second increments, stopping to stir in between (this is necessary so that the chocolate does not burn).
  6. Once the chocolate has completely melted, add the coconut oil to the chocolate.
  7. After the truffles have chilled, stick a toothpick in one truffle at a time and dip each truffle into the chocolate-coconut oil coating. Let any excess coating drip off into the bowl before placing the coated truffles back on the wax paper.
  8. Coat truffles with excess nuts or sprinkles.
  9. Let the coating set before serving. Store any leftovers in the fridge.
