Healthy Corn Elote
There's no better time to enjoy corn than in the summer. If you have trouble getting your little ones to eat their veggies, we guarantee you won't with this recipe!
Ingredients
- 1/2 cup corn kernels
- 1/2 tablespoon lime juice
- 2 tablespoons greek yogurt
- 2 tablespoons crumbled feta cheese
- 1/4 tablespoon red onion
- 1/4 tablespoon garlic
- 1/4 tablespoon fresh cilantro
Instructions
- Put the corn and garlic in the steamer basket.
- Pour water into the tank (level 2).
- Start the cooking process.
- Once the corn and garlic are cooked, set aside on a plate, setting the cooking liquid aside.
- Place the lime juice, greek yogurt, crumbled feta cheese, red onion and cilantro in the blending bowl.
- Pulse to blend just until combined.
- If feeding to a baby, add the corn and garlic to the blending bowl.
- Pulse, adding cooking liquid if needed to bring to the desired consistency.
- If feeding to the rest of your family, serve the corn with the greek yogurt mixture on top.
