Eggplant, Tomato and Lentil Purée

Lentils for baby…why not? When made into a purée, lentils become creamy and take on the flavors of the food that they’re cooked with (in this case, eggplant and tomato). Though lentils may not be thought of as a traditional baby food, they have high levels of iron, protein and fiber which are oh-so important for baby!

  1. Put the lentils in the Rice, Pasta and Grains insert.
  2. Pour water into the tank (level 3) and 1/4 cup + 3 tablespoons of water directly into the bowl.
  3. Start the cooking process.
  4. When the lentils are cooked, put them in a bowl and set it aside.
  5. Put the eggplant and tomato in the steamer basket.
  6. Pour water into the tank (level 2).
  7. Start the cooking process.
  8. When the eggplant and tomato are cooked, put them in the blending bowl with the lentils, reserving the cooking liquid.
  9. Add some of the cooking liquid to bring the purée to the desired consistency and blend.
