Chocolate Olive Oil Cookies
We may be biased, but we think these cookies are the best chocolate cookies out there! Did you know that dark chocolate helps regulate blood sugar, regulate cholesterol and boost immunity? The addition of olive oil makes these cookies a super, heart-healthy treat.
Ingredients
- 1/2 cup semi-sweet or dark chocolate chips divided
- 3/4 cup flour
- 1/4 cup cocoa powder (unsweetened)
- 1 teaspoon baking soda
- 2 tablespoons olive oil
- 1 egg
- 3 teaspoons coconut sugar
- 1 teaspoon vanilla
- 1/2 teaspoon coarse sea salt optional
Instructions
- Preheat oven to 350 degrees.
- Melt ¼ cup of chocolate chips in a saucepan on low heat.
- Put the flour, cocoa powder, and baking soda in the blending bowl and pulse to combine.
- Remove to a bowl.
- Put the olive oil, egg, coconut sugar, vanilla, and melted chocolate in the blending bowl and blend.
- Add the dry ingredients and extra chocolate chips and pulse just until batter comes together.
- Scoop 1 ½ tablespoon-size dollops of dough onto parchment-lined baking pan. (Option: sprinkle tops of cookies with coarse sea salt before baking.)
- Bake for 10 minutes.
- Cool on pan.
